Petit Chablis La Perle 2020

Clear yellow colour with greenish highlights, the Petit Chablis La Perla is clear and luminous. This vintage is more intense than previous vintages.
The nose is aromatic with a fresh profile of citrus and white grape aromas, and mineral scents.
The attack in the mouth is fresh and straight forward. The middle of this Petit Chablis is refreshing and pleasant notes of lemon, anise and vanilla come through in the mouth. Aromatically long, the finish is well balanced and refreshing.
To conclude, a crisp lively Perle from Millet.

We advise you to keep it at a temperature between 10 and 12°C. Very easy to appreciate while young, this wine will age not more than 3 years. Click on our culinary suggestions to discover what food pairs best with this wine.

Shrimp brochette with basil sauce

Ingredients for 4 servings:plat de crevettes

For the brochettes

- 36 large pink shrimp

- 18 bay leaves

- 7 tbsp of olive oil

- 1 whole lemon

- 1 tbsp of freshly grated ginger

- Salt and pepper to taste

For the basil sauce

- 1 egg yoke

- A squeeze of lemon

- 20 cl of olive oil

- 1 tbsp chopped capers

- 3 tbsp of chopped basil

- Salt and pepper to taste


Prepare the marinade with 4 tbsp of olive oil, the grated ginger and the lemon juice. Place the shelled and de-veined shrimp in the marinate and let sit in the fridge for 2 hours.

For the basil sauce, mix the egg yoke, the pepper, the salt and the lemon juice. Pour in the olive oil and whisk until the mixture becomes mayonnaise. Add the chopped capers and basil.

Skewer your shrimp and insert half of one bay leaf in between. Heat some olive oil in a pan and cook the brochettes 2-3 minutes; turning them. Add salt and pepper. Serve with the basil mayonnaise.
