Petit Chablis 2017
This Petit Chablis of pale colour with turquoise highlights is clear and gleaming to the eye.
The nose is fine and elegant, with pleasant notes such as crisp celery and rich exotic notes of pineapple and pear.
In the mouth, the attack is supple and fresh. The middle is characterized by roundness: pineapple and pear on the palate give the wine length and richness.
The finish is juicy and harmonious.
This refreshing and well-balanced wine is to be drunk between 10 and 12°C. Very easy to appreciate while young, this wine will age not more than 3 years. To enhance this wine’s qualities, let us guide you with our culinary suggestions.
Ingredients for 4 servings:
- 1.5 kg clams in their shells
- baby potatoes (5-6 per person)
- 1 onion
- 10 sprigs of thyme
- 5 tbsp of heavy cream
- 20 g of butter
Rinse the clams thoroughly.
Cook the baby potatoes in water with salt.
Melt the butter in a casserole pan and add the sliced onion and cook gently until the onion has softened and becomes translucent. Add the clams in their shells, the thyme and the pepper. Cover so the clams will open. Stir so any clams that are not open, will open, then mix in the new potatoes and heavy cream. Let cook for 5-6 minutes. Add salt if needed.
