"The best wine will always be the result of a harvest defined by beautiful grapes picked at perfect maturity." Since the creation of the estate, the focus has been on obtaining quality, typicity and authenticity by working with nature and not against it. With this vision, the quest has been to find the optimal environment for the grapes. Also, protective treatments are considered only after careful observation and used only if really necessary.

Soil, branch and leaf samples are taken so that we have a better understand of the physiology of the plant and can come up with the best course of action to respond to what it needs. In addition, there is a procedure in place that allows us to control yields. Once we estimate that the grapes have achieved full maturity, we begin harvesting. Based on previous vintages that means September or early October. When the pressing is completed, we vinify the juice in stainless steel or enameled steel tanks exclusively to preserve the aromas of the Chablis "terroir".

We are fortunate to work in collaboration with one of the best French winemakers, Mr. Jean-Pierre Rodolphe Lédé.   With a wealth of experience that spans more than 30 years, he has provided consulting services to producers all over the world and to the most prestigious Burgundy estates.   His expert eye, nose and palate allows us to pull the best out of each vintage: finesse, elegance and freshness.
