The vineyards of Chablis are situated in the most Northern viticultural region of Burgundy. In Chablis, the climate is the continental type. The 4 seasons are separate and distinct: the winters are rigorous, frost is seen in the springtime, summers are hot and the autumn brings optimum conditions for the ripening of the grape.
In order to define the four appellations that form the vineyards of Chablis, several criteria were established: the expose of the slope, the microclimate, the type of soil. These criteria are the same for the rest of the burgundy appellations which number more than 100.

Petit Chablis
This communal appellation was established in 1944 and can be brewed on every villages of the Chablis area.
Petit Chablis characteristics are:
- Grape: Chardonnay
- Location These lands are situated high on the side of where the plateau begins, varied exposures
- Soil: Brown hard limestone and at times muddy and sandy, often the Portlandian type.
- Production surface: 1 562 ha
- Maximum authorized yield: 60 hectoliters per hectare
- Tasting temperature: 10 to 11 °C

Chablis
This appellation was established in january 1938 and concern the follwing villages: Beine, Béru, Chablis, Fyé, Milly, Poinchy, La Chapelle Vaupelteigne, Chemilly sur Serein, Chichée, Collan, Courgis, Fleys, Fontenay Près Chablis, Ligorelles, Ligny le Châtel, Maligny, Poily sur Serein, Préhy, Villy, Viviers.
Chablis characteristics are:
- Grape: Chardonnay
- Location: On the slopes
- Soil: Jurassic; more precisely Kimmeridgian. Deposits of minuscule oysters found in the rock, are a reminder that 150 million years ago a warm, shallow sea covered Burgundy.
- Production surface: 4,420 ha
- Maximum authorized yield: 60 hectoliters per hectare
- Tasting temperature: 11 to 12 °C

Chablis Premier Cru
This communal appellation was established in 1938 and comprises 40
climates of which there are 17 main ones (Montée de Tonnerre, Fourchaume, Mont de Milieu, Vaucoupin, Vauluisant, Montmains, Vosgros, Vaugiraut, Côte de Léchet, Vaillons, Vaulorent, Les Forêts, Troesmes, l'Homme Mort, Beauroy, Vau Ligneau, Vau de Vey …). The producing communes are: Beine, Chablis, la Chapelle Vaupelteigne, Chichée, Courgis, Fleys, Fontenay Près Chablis, Fyé, Maligny, Milly, Poinchy.
Chablis Premier Cru Characteristics are:
- Grape: Chardonnay
- Location: The slopes with mainly South- estern and South-Eastern exposures
- Soil: Jurassic; more precisely Kimmeridgian. Deposits of minuscule oysters found in the rock, are a reminder that 150 million years ago a warm shallow sea covered Burgundy.
- Production surface: 745 ha
- Maximum authorized yield: 58 hectoliters per hectare
- Tasting temperature: 12 to 13 °C

Chablis Grand Cru
The Grand Cru appellation was established in 1938 in the commune of Chablis only. It comprises seven climates: Blanchot, Bougros, Les Clos, Grenouilles, Preuses, Valmur et Vaudésir.
Chablis Grand Cru Characteristics are:
- Grape: Chardonnay
- Location: On the right bank of the Serein, slopes facing primarily South-West, with excellent exposure to the sun.
- Soil: Limestone and marl composed of Exogyra virgula (tiny fossilized oysters).
- Production surface: 100 ha, which is only 2% of the whole vineyard surface.
- Maximum authorized yield: 54 hectoliters per hectare
- Tasting temperature: 12 to 13 °C
